Title: Biggest differences between Kajukenbo and Kenpo Karate?

I'd imagine the Kata's are different, what about sparring techniques though? Also any differences in the striking attacks?

Depends on the "kenpo" lineage as well as the "kajukenbo" lineage.

I would wager my Kajukenbo doesn't look much like most kenpo you have seen - on the surface.
Especially since we do not practice "katas" at all.
We mostly train boxing, FMA and grappling instead.

The only "sparring" we do is full-contact JKD kickboxing (16oz boxing gloves and full mouth guard for beginners) or vale tudo rolling.
Occasionally we will do hard contact stick fighting (wearing some protection) or full-contact Predator Armour training.

We do not train for "point sparring" tournaments at all, although some of my Krew do compete in open grappling tournaments, like NAGA.
